These are the best cookies you will ever eat. Well that is, if you like chocolate and deliciousness and a cookie that keeps its shape.
The original recipe is here, but I did modify. I put my version below.
First, I went with a dutched cocoa powder instead of the regular. It’s a little less acidic and the one I happened to grab out of the pantry. Most stores sell it, but it will be labelled differently than the regular. It has to say “Dutch” in some form.
My second change was that I used some dark chocolate chips. That’s what we keep on hand around here. But I didn’t have a full amount so it ended up being about half semi sweet and half dark chocolate. I need to make a grocery store order….
Third, I left out the nuts. My four year old is allergic to all nuts so it’s a pass.
Fourth, I always use unsalted butter. I didn’t add any extra salt to compensate.
Finally and most importantly, we added marshmallows. Trust me, it’s soooo worth it.
- 1 cup Butter, unsalted
- 1 ½ cups Sugars, granulated
- 2 Egg, whole, raw, fresh
- 2 teaspoons Vanilla extract
- 2 cups flour, white, all-purpose, enriched, bleached
- ⅔ cup Dutched Cocoa powder, unsweetened
- ¾ teaspoon baking soda
- ¼ teaspoon Salt
- 1 cup semisweet chocolate chips
- 1 cup dark chocolate chips
- Large Marshmallows
Step 1 Preheat oven to 350 degrees F (175 degrees C).
Step 2 In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
Step 3 Bake for 6 to 8 minutes in the preheated oven, or just almost set. You want them to be gooey because you are going to put them back in.
Step 4 Carefully remove the cookies from the oven and change the over to broil. Top each cookie with a large marshmallow and put back in the oven.
Step 5 Cook for about a minute until the marshmallows lightly brown on top. Take out and cool slightly on the cookie sheets before transferring to wire racks to cool completely.
